What’s Cooking This Week

Not all things in life could be fixed, especially the ones you have no control over. You can always mediate your reaction to them though, chocolate, and desserts in general, found to be a good mediator, for just about anything.

Chocolate-Almond Loaf with Maple Glaze

Makes 2 loaves:

1 stick of butter, melted

1/2 cup of olive oil

5 eggs, room temperature

1 cup of flour (I used Authentic Foods gluten free multi-blend)

1 cup of almond flour

1/2 cup of cacao powder

3/4 cup of raw sugar

1/4 cup of maple syrup

2 tspoons of baking powder

In a bowl, beat together eggs and sugar, then add maple syrup and beat again. Whisk together melted butter and oil and set aside. In another bowl, combine all the dry ingredients.

Gradually combine the dry ingredients and the egg/sugar mix, then whisk in butter/oil into the dough. Preheat the oven to 325 degrees. Grease two loaf pans and pour the batter in. Bake for about 40-50 minutes. Cool completely before removing from the pans and icing.

Maple glaze:

1 Tbspoon of butter

1/4 cup of maple syrup

1 cup of powdered sugar

In a small pan melt the butter and then add maple sugar boiling the mix for 1 minute on a low flame, gradually whisk in powdered sugar until all is incorporated. Glaze the loaves right away before butter starts to harden again.

The not too sweet loaf with a hint of almond is perfectly mediated by sweet maple glaze, and in that moment, life is perfect again…

Sometimes you get people in your life with whom you have more “goodbyes” than “hellos”. And sometimes those “goodbyes” are more important than the whole relationship because letting go is an act of love in itself and a word of care in action. I had two people like that in my life, I hope you had at least one as I think if you haven’t experienced loss, you won’t have anything to compare how great the love was.

The Prince of Tides is one of my favorite movies, and the book is even more amazing than what you see on a screen. Through love, they find their healing and getting whole again, through love, they lose each other but carry the spark with them throughout the rest of their lives. The separation scene is poignant and emotionally charged at the same time, you feel the loss and the new beginning all entwined in one, you damn the necessity of letting go and you applaud the beautiful closure.

Unfortunately, in life, you don’t always get the farewell you’d imagine to be the best, even if you really wanted it, or felt that you truly deserved it. Sometimes you get “whatever was available” depending on life circumstances and how the other person viewed not just the ending but the whole relationship. And you can cry your eyes out how it happened, or you can complain that it’s not fair, it won’t change the fact that there were two “dealers” in this ” game of broken hearts”, yours just did not win this time, or that time either.

And it’s probably best to leave the winners in their new round of the Russian Love Roulette as they are obviously more successful in it, or at least to wish them that their winning streak would continue.  So long my Prince of Tides, I had more ebb than flow with you, but such was the cycle of that relationship! And the White Horseman, he is long gone on a road of his own, where it leads him, I do not know, but he is happy just to take the journey.

So goodbye my loves! If the farewell was a bit bitter for you, I’m sure you can sweeten it with your new winning card. Till I see you both again, in heaven, in due time for each of us!

What’s Cooking This Week

I think during times like that, you’re allowed to medicate yourself a little, just to take the edge off and get adjusted to the new situation. Whatever your medicine is, the actual pill, some sweets or alcohol, immerse yourself into the experience, cry, if you have to, buy some cheap plates to break a few (learned the hard way), or just quietly curl on a couch sipping your drink and walking down the memory lane.

“Anarchy in the Peddler-Land” Iced Tea

2 oz of vodka (I used Liv potato vodka to make it gluten free)

4 oz of strong black tea, brewed and cooled off

1-2 lemon slices

1 sugar cube

Dissolve a sugar cube in tea, squeeze lemon juice from 1 slice and place it on a bottom of a cocktail glass. Add tea with sugar and then vodka, mix it well, then garnish with more lemon if desired. Skip the ice to make it stronger.

If you still feel sad, have another, or try it with some chocolate.

Diana from Food N Thought Peddler came forward with both this great recipe and a very personal story. Early this year my mother was diagnosed with breast cancer. She ha surgery and right now (knock on wood) appears to be cancer free. Welcome Diana....

A month ago, while reading one of the posts on The Ranting Chef blog, I stumbled upon this awesome program, Foodie Penpals, created by Lindsay at The Lean Green Bean www.theleangreenbean.com .

I was immediately drawn to the idea, I do love cooking and trying different foods, and I do love writing (it’d be hard to maintain a blog if I didn’t :) ), so it was a no-brainer that I just had to join.

And what’s not to love?!  On the 5th of each month, you get paired with two people, one who is sending a box of different goodies to you, and one who you have to send a box to. I was especially excited that you get to enclose something hand-written too. In this age of technology and instant communication, it’s not too often you get to practice penmanship skills. And to use your personalized pink stationery.

 

Just so happened that this month both my “sender” pal and a “receiver” pal were newbies too, so dare I say, all three of us had a great time participating in the program!

My “sender” pal this month was Heather who lives in California and who sent me a box full of delicious goodies. I was especially grateful she was just so considered that she adhered to my gluten free specifications and sent me foods I can enjoy. I also got a note explaining where the foods come from, it was surely interesting to know what local establishments “contributed” their share to fill the box I got.

Even before the box was opened, I could smell the popcorn and couldn’t wait to have my hands (and mouth) full of it. Oh boy, it was good! Sweet and slightly salty with fresh caramel taste, I ate it before the kid had a chance to discover what was in the box (lucky me :) ).

This is the local honey we got in a cute bear jar, it was tasty and smelled like flowers.

I was excited to try these gluten free cookie bars, I’ve never heard of this company before but will definitely be on a look-out for their products, especially if they come individually wrapped, I’m always happy to throw a pre-packaged cookie in my purse for those spur-of-the-moment dessert outings.

Veggie chips is just the healthy snack to share during a “movie night”, it went well with some salsa and hummus.

I usually add nuts to my morning oatmeal or yogurt, so this addition was right on for my breakfast “fix”. A pink lemonade  mix is great for when you feel under the weather and need a quick Emergen-C remedy to feel better by evening. A fruit “rope” was a nice touch from Heather’s son, very much appreciated by my kid, right before dinner (old habits never die apparently), but since he is now the ever-hungry teenager, dinner was eagerly consumed too.

The Pomegranate BBQ glaze looks like it’d be wonderful on just about any meat coming off the grill. I do, however, need to call the manufacturer to see if the Worcestershire sauce they used was gluten free.

Thank you Heather for such thoughtful and full of healthy food finds mix! And I’m now looking forward to more goodies in August!

 For many of us this has been not just a hot summer, but a sweltering one. My brother and his family live in the Phoenix area and while they call during February and talk about their 70 degree days and taking a walk in the park, I normally get to do the same during the summer months. While we have not been as hot as they have (109 the day I am writing this intro), we have not been cool enough to really brag.

 I was excited to be a guest blogger for The Ranting Chef yet again, thank you, Pat! It was so interesting to see how something that is a very common dish in one ethnicity can be a novelty for somebody else. Hope you all enjoy it the way my family does!

It wasn’t business as usual in Casa de Peddler this past weekend. Tempers were flaring, hot words were flying. The kid was moody, and mama was not happy either, plus some outside influences were fueling the flames for both sides.

Looking at it from the “bird’s eye view”, it wasn’t unusual, the kid is still a teen and prone to eruptions of an enormous magnitude, plus the school year is nearing the end (but apparently not fast enough). And mama was not her usual self, physically and emotionally, these past couple of weeks, with some coming changes at work and a burnout on a personal level.

Vacation next week can’t come at a better time!

So, I had a task at hand, calm myself down and also calm the kid so some normalcy could be restored, and the weekend is enjoyed in its full glory of a gorgeous weather and some relaxing activities. I don’t know how it is in your house, but in mine that “magic wand” is food. As it goes with any 15 year-old boy, eating is the most enjoyable activity (right next to computer and some other electronic devices games) that could be experienced many times throughout the day. And it just so happens that mama loves to cook, for her kid and everybody else, in a true Peddler fashion. Cooking is something that soothes and relaxes me (given the fact that it’s not a crazy busy week night when you have to put dinner on a table so you can move on to do 1000 other chores). It puts me in some kind of a meditative state that I often don’t even turn TV or music on to bathe in a nourishing silence and just create in the kitchen (even if creations are quite simple).

So, the task was to calm myself and please my boy. Oh, and of course it had to be at least semi-healthy:)

What’s Cooking This Week

The kid is generally not a big sweets-eater (contrary to his mama, that if not to having to eat gluten free and thus restricted from just grabbing every cake and cookie in sight, she’d have a much harder time to deal with her “sweet tooth”), but he rarely says “no” to a homemade sweet concoction, or to chocolate (that’s my boy!).  Therefore, it was decided that donuts could be a nice “bridge” back to sanity in Casa de Peddler. Oh, yeah, they are only 190 calories each and very low in fat, plus gluten and dairy free of course:)

 Banana Donuts With Maple Glaze

2 ripe bananas, mashed

1 large egg, beaten

3 Tbspoons of a plain almond or coconut milk

1 Tbspoon olive oil

1 tspoon vanilla extract

1/4 cup sugar

3/4 tspoon cinnamon

1/2 cup brown rice flour (I used Authentic Foods brand)

(use regular wheat flour if not gluten free)

1/2 cup cornstarch

1 tspoon baking powder

1/4 tspoon baking soda

1/2 tspoon xanthan gum

Pre-heat oven to 350 degrees and spray the donut pan with a cooking spray. Combine bananas, milk, egg, sugar, cinnamon, oil and vanilla and whisk it all together.

Add the remaining dry ingredients and stir untill the batter is smooth. Fill each donut round with about 2 heaping Tbspoons of batter (I used regular donut pan and a heart-shaped one), dampen your fingers in water to smooth the donut batter on top.

Bake for 8-9 minutes, then let them cool for a few minutes before removing from pans. Cool completely before glazing or frosting.

Maple Glaze                                                                                                                     

3 Tbspoons pure maple syrup                                                                                          

1/3 tspoon vanilla extract                                                                                                  

1/3 cup powdered sugar 

Combine all ingredients untill smooth, dip cooled donuts in.

I also made a few frosted donuts for the kid. Yep, he ate them all, not even the pink color could stop him:)

Butter Raspberry Frosting

2 Tbspoons of butter

3 Tbspoons of raspberry preserves

Whip together butter and preserves, spread about 1-1 1/2 Tbspoons of frosting on each donut, top with sprinkles if desired.

So when the kid came home from visiting a friend these “buddies” met him at the door. We shared the donuts and the stories how the day went for each of us. The peace was restored, and the love was always ever-present in Casa de Peddler.
